Easy, fresh, a favorite. I make a big batch so we have leftovers.

Roughly chop the broccoli then dump it in a food processor and pulse a few times to get it to very finely chopped. I usually have to do this in a couple of batches.

Throw the finely chopped broccoli in a big bowl, preferably one with a tight-fitting lid. Salt and pepper well and stir it all up. Add other seasonings if you feel like it.

In a separate bowl, mix equal parts lemon juice and olive oil. Whisk it around then pour it over the broccoli. Put on the lid and shake shake shake. Add any optional ingredients and stir to combine.

Let it sit for a while in the fridge, a couple of hours to overnight, before serving.
