Green Goddess chicken salad
adapted from Green Goddess Chicken Salad Recipe
- shredded chicken (rotisserie, slow cooker) or diced bite-size chicken
- GARDEN/notes/Green goddess dressing
- celery, kalamata olives, artichoke hearts, peppers
- optional: red onions, feta
Classic Mom-style chicken salad
like Mom used to make, with a few updates
- shredded chicken
- dressing: Equal parts mayo and plain greek yogurt, a good dollop of Dijon + lemon juice, celery seed, salt & pepper to taste.
- diced celery
- red grapes (quartered) OR dried cranberries
- slivered almonds or chopped pecans or walnuts
- optional: diced red onion, fresh dill, chopped pickles
Honey-mustard chicken salad
adapted from Rainbow Chicken Salad with Almond Honey Mustard Dressing Recipe - Pinch of Yum
- dressing: Blend 3 tablespoons almond butter, 1 tablespoon olive or avo oil, 2 tablespoons good mustard, 2 tablespoons fresh orange juice OR 1 tablespoon fresh lemon juice, 1 tablespoon honey, 1 clove garlic, 3 tablespoons water. Salt to taste.
- diced bite-sized cooked chicken, seasoned with salt, pepper, chili powder, cumin.
- fresh blueberries, feta, chopped almonds, peppers, cucumber
- Toss chicken with other ingredients and dressing
- Serve over a green base
- Sub walnuts or pecan for the almonds
- Add toasted chickpeas
Cobb chicken salad
- dressing: blend a tangy vinaigrette with 1 ripe avocado, 1/4 cup plain greek yogurt, and a good glug of lemon juice or vinegar.
