I don’t use a strict recipe, more of a method. ***
Method
- take some bones, usually from a whole chicken. Fine if they still have meat on them. Take skin off though, as it makes the broth greasy.
- throw the bones in a stock pot and add water to 3/4 full
- add peeled and lightly crushed garlic cloves. Lots.
- add a peeled and roughly chopped onion or two.
- add more vegetables: carrots, celery, etc. Can roughly chop or not.
- add more good stuff if you have it: fresh herbs - just the stems is fine!, ginger, turmeric, other odds-and-ends veggies
- add sea salt and vinegar
- simmer for a WHILE. I usually let it simmer all day, put it in the fridge at night, then add water and simmer another whole day
- let cool, skim off fat, put in containers and freezer or refrigerate.
